Preheat oven to 300 degrees. Whisk egg white in a cup, pour over nuts, and stir until coated. In a small bowl, combine ingredients for cinnamon mixture and add to coated pecans a little at a time while stirring. Spread pecans on an ungreased baking sheet. Bake for 20 minutes without stirring. Immediately remove pecans from hot baking sheet with a spatula. Allow to cool thoroughly. Store in a tightly closed container in a cool place.
